Vieux Marc
Our distillery has a Faustian atmosphere. The distilling process and the equipment have remained unchanged for nearly 200 years. First, in a direct-fired still, the marc or pomace is distilled to a cloudy spirit. This liquid, about 20% alcohol by volume, is then distilled in a second still to make marc. The “head” and the “tail” are separated off and discarded. Only the middle part, the “heart”, then rests for 15 years in small oak casks, which give it its golden brown colour.
