Sauvignon Blanc

Typical of this type of grape is the fresh green perfume in the nose which can be described as being like that of nettles. Blackcurrant and elderflower notes are also strong. As the wine matures, passion fruit often joins the range of aromas. To maintain a good balance between green notes and exotic fruits, Sauvignon Blanc requires special care and attention in the vineyard and is usually harvested in two stages.

We let this wine mature without malolactic fermentation, in steel tanks.
